Layne Lieberman – BEYOND THE MEDITERRANEAN DIET
Hear award-winning registered dietitian Layne Lieberman talk about her own history of high cholesterol as a child and her discoveries about why Europeans in the Mediterranean region seem to enjoy greater health and longevity.
About Layne Lieberman, MS, RDN, CDN
Layne Lieberman is passionate about food, health and nutrition. She holds a Bachelor of Science degree in Nutritional Biochemistry from Cornell University and a Master of Science degree in Clinical Nutrition from New York University. She completed both an internship and fellowship at the Albert Einstein College of Medicine, trained at the Culinary Institute of America, and spent 20 years as Director of Nutrition for America’s first supermarket chain.
A featured nutrition expert on numerous television and radio shows, Layne leads culinary tours to southern Italy, blogs for the Huffington Post and maintains an e-counseling practice. Currently she offers nutritional consulting services to restaurants and the food industry.
Layne gives back to the community by mentoring nutrition undergraduate and graduate students and is involved in various philanthropic activities with non-profits including the American Heart Association, which awarded her with the distinguished Heart Health Achievement Award in June 2012.
Layne’s interest in food and nutrition started at age nine, when she was diagnosed with dangerously elevated cholesterol. While living as an expat in Europe, Layne was struck by the awareness that the solution to America’s obesity and health crises could be found in the cuisines and lifestyles of three European countries: Switzerland, Italy and France. These countries have the longest life expectancies and the lowest rates of heart disease and obesity in Europe. And yet they are still able to enjoy “la dolce vita” – the good life- that we all want. They enjoy pasta, chocolate, cheese, bread, yet still enjoy a long and vibrant life. These countries provide an excellent role model for us in combining healthy lifestyle with a passion for wholesome food.
“Let’s not sugarcoat the facts — America is in the midst of an obesity and chronic disease epidemic that’s taking a huge toll on our nation’s health. Today, one-third of American adults are obese, while another third are overweight. Obesity in children is an especially worrisome trend.”

Layne Lieberman discovered that three European countries were leaders in longevity, with very low rates of heart disease, obesity and diabetes. And yet, these countries Italy, France and Switzerland boast some of the world’s most decadent foods.
Layne traveled to Europe to learn firsthand just how these countries could combine superb food, a relaxed lifestyle and exceptional health. Now, she shares her findings with readers who face the daily temptations of processed foods loaded with fat, sugar and salt.
Included in the full-colour book that was a 2015 Finalist for the Next Generation Indie Book Awards (Category: Health & Wellness) are 50 mouthwatering and nutritious recipes with nutritional analysis.

“Reading food labels on packaged foods is less effective than actually touching, smelling, and tasting fresh food.”
