About James Sant
As a lifelong professional artist, James has worked in just about every medium including clay art, sculpting, painting, textile art, set design, art administration, film documentary and photography. A serious industrial accident led him to discover the power of healing through a diet based on living foods. He has taken his life-long passion for plant-based eating and merged it with his artistic talents; becoming a certified gourmet raw food chef, raw pastry chef, as well as a yoga and chef instructor. James also recently completed the vegan Plantrician Culinary RX program through Rouxbe Cooking School. As an instructor for the Raw Culinary Arts Associate Chef and Instructor Training™ at Living Light Culinary Arts Institute in Fort Bragg, California, James brings together his years of entrepreneurial and culinary knowledge.

James Lives The Life He Teaches…
Two of Chef James’ culinary passions are fermented foods and bread making. His heritage includes a long family history of bakers in Salt Lake City, Utah, and he has parlayed that heritage into making exquisite breads from sprouted grains and seeds. He even grinds his own flour from sprouted, dehydrated grains. At his home, you’ll see an ever-changing array of carefully labeled jars of all sorts of fermented foods. He loves to experiment with a wide variety of krauts, pickles, fermented drinks, and condiments, and of course, he enjoys teaching our students how to understand the fine art and science of fermentation. It’s an important skill to learn, since fermented and cultured foods are a vital part of a healthy living food lifestyle.
